Hormones.... The Bane of My Life!!!!
Haven't been on line for a while. I've been dealing with hormones. Perimenopause has been very difficult this past month. So I got my menopause bible out.... The Wisdom Of Menopause by Christiane Northrup M.D., took a trip to the Whole Foods market and have added Dong Quai (Angelica) and Chasteberry (Vitex) to my list of supplements and I may add Licorice Root down the road. Hopefully this will even out my hormones and they will go out like a lamb rather than a lion!!!
I ate myself through Thanksgiving, so I really have to get myself back on track. My self control seems to have gone out the window, hopefully that will return along with balanced hormones.
Discovered a natural alternative to marshmallow fluff at the Whole Foods store. Rice syrup fluff looks just like the other only its made from brown rice, it contains soy protein also so I can't have it, but I'm going to search the web for a recipe to make my own. I'll let you know if I find one.
Well have some other things to do so TTFN

Under The Weather
Been under the weather the past week. My son likes to share his germs!! Feeling much better now.
Went to my meeting Friday, unfortunately was up 3 pounds. Will power goes right out the window when you don't feel 100% and don't have much of an appetite, you seem to crave all the wrong foods. I guess that's why they are called comfort foods!!!! We discussed some tips for surviving the up coming Holiday season, like taking smaller portions of dessert and putting them on the smallest plate and maybe eating them with a baby spoon, that way they last a lot longer and are more satisfying than if you just 'wolf' them down. Also making cakes with a cake mix, a can of pumpkin and a little water to make the batter the right consistency OR cake mix and a can of soda (diet or regular), no really, that's all you need, try it you will be surprised.
Well this posting is short and sweet, but I'm back on track and raring to go!!!!

Life Is Good.... I Think!!
Had a pretty good week last week.
Got tired of the same old thing for lunch, so made myself a veggie frittata. Used one whole egg and 3 egg whites (3 points) and then veggies: sauteed a whole portabello cap, some onion and a whole load of spinach, poured the egg over the top, cooked it a little and then finished it off under the broiler (heads up, if you don't think the handle of your pan is oven proof cover it with a thick layer of foil), then sprinkled one points worth of parmesan over the top, delicious, very filling and only 4 points and 3 vegetables. TIP: freeze the egg yolks in a ziplock bag and when you have 8 make yourself a batch of lemon curd, easy recipe in September issue of Martha Stewarts Everyday Food magazine: everydayfoodmag.com
Friday was a little disappointing at weigh in. I stayed the same, but such is life, at least I didn't gain
Finished reading The Lost Symbol on Sunday it goes on my list of all time favorite books, Dan Brown certainly likes to keep the suspense going and knows how to leave the reader wanting more, can't wait for the movie. The book certainly leaves you thinking about the power of the mind and made me think of A New Earth by Eckhart Tolle ( another of my all time favorites) I think that I just might have to reread it!
Made a great 2 point salad dressing last night: 1 tblspn dijon mustard, 2 teaspns olive oil, 1 teaspn honey and the juice of half a lightly squeezed lemon, very tasty, and uses up your oil requirement, if you don't have lemon you could use a teaspn or 2 of vinegar.
Well can't sit hear all day must go do my exercises!!!!

Meltdown!!!
Had a meltdown yesterday! Wanted to have some pizza, but no.... couldn't make my own little pizza. Had to have the left over garlic bread pepperoni pizza in the fridge... all 12 points of it!!! Then followed it with 5 points worth of ice cream and 5 points worth of chocolate! By my calculations that's 22 points right there and I only had 20 points left and it was only lunch time!!! I'm done for!
NO, NO, NO all is not lost. I focused on my goals and what I wanted to accomplish and got right back on track. I made spaghetti for supper but I had a huge salad with lots of 0 point veggies, 1/2 a cup of chickpeas and some cottage cheese. My huge salad was only 3 points and very filling and at the end of the day I used 5 of my extra points for the week...no big deal.
Today is a new day and I'm still right back on track, did my exercises and am feeling good. Now if I could only figure out how to control my hormones, cos this happens every month!

Survived Halloween
Well I survived Halloween!!!!! Actually bought myself a bar of the dove chocolate with the 3 individually wrapped servings inside. Each serving was 4 points. I just had one and it was enough. Spent the evening outside with a bunch of neighbors handing out candy to the kids, good company and conversation, I didn't think about eating the candy at all.
Made some great Autumn Soup yesterday:
1 tablespoon olive oil
1 large onion chopped
2 cloves garlic finely chopped
4 cups butternut squash peeled, deseeded and cubed
4 cups celery root(celeriac) peeled and cubed
1 large white potato(approx. 10 oz) peeled and cubed
1 quart chicken stock or broth
2 cups water
2 sprigs fresh thyme
2 tablespoons fresh rosemary finely chopped
salt and pepper to taste
1 cup fat free milk
1/4 cup half and half
Heat oil, add onion cook until softened. Add garlic cook 1 minute. Add rest of ingredients except for milk and half and half. Simmer approximately 45 minutes or until veggies are tender. Add milk and half and half, remove thyme stems. Blend in pot with hand blender or in blender (do in small batches if using regular blender). Add more salt and pepper if necessary.
Yields approximately 9 one and a half cup servings at 3 points per serving. Soup tastes a lot more decadent than it really is!
Also changed the Carrot Bread recipe and started a batch yesterday:
1 1/2 cups whole wheat flour
1 1/2 cups bread flour
1 1/4 teaspoons salt
1/4 teaspoon active dry yeast
1 1/2 cups carrot juice
1/2 cup currants
1/2 cup chopped walnuts
Follow the recipe as before. Go to marthastewart.com and search carrot bread.
Recipe is a total of 30 points so it depends on how many slices you cut as to points value of each slice e.g 15 slices would be 2 points per slice.

TGIF!
Well it's Friday, my WW day. Stayed the same at weigh in, didn't expect to lose this week because I lost 4.4 pounds last week. How did I do on the whole this past week, pretty good. It was Girls Night Out, Wednesday, and we happened to go to a restaurant where just about everything was fried, bummer! So it was difficult to make a choice. Ended up with chicken quesedillas, took half home, but ended up eating the rest of it later. That was O.K. used my extra points and got right back on track. Have been exercising every day yeeaaahhhh! I am really enjoying the Wii Active.
Made a great recipe last night. Oven Fried Chicken, it was great, even the kids ate it. I trimmed and stripped some chicken breast and then salt and peppered them, dipped them in Tzatziki, then rolled them in Panko bread crumbs mixed with fresh chopped flat leaf parsley. (Panko are japanese bread crumbs, very white and they stay very crisp). Baked them at 400 for about 25 mins. I also roasted a mixture of cubed butternut squash and white potatoes that I sprayed with olive oil and seasoned with salt and pepper. I figured that 3 oz of the chicken would be around 4 points and a cup of the veggies 2 points. When I spray oil I now use a Misto, (available at
Bed Bath and Beyond), you fill it with whatever oil you want pump it up and off you spray!! It's all natural and no silicone or other unhealthy chemicals. I have 2 of them, one for olive oil and one for canola, I use them because the other type of spray oils have additives that I am allergic to.
