TGIF!

Well it's Friday, my WW day. Stayed the same at weigh in, didn't expect to lose this week because I lost 4.4 pounds last week. How did I do on the whole this past week, pretty good. It was Girls Night Out, Wednesday, and we happened to go to a restaurant where just about everything was fried, bummer! So it was difficult to make a choice. Ended up with chicken quesedillas, took half home, but ended up eating the rest of it later. That was O.K. used my extra points and got right back on track. Have been exercising every day yeeaaahhhh! I am really enjoying the Wii Active.
Made a great recipe last night. Oven Fried Chicken, it was great, even the kids ate it. I trimmed and stripped some chicken breast and then salt and peppered them, dipped them in Tzatziki, then rolled them in Panko bread crumbs mixed with fresh chopped flat leaf parsley. (Panko are japanese bread crumbs, very white and they stay very crisp). Baked them at 400 for about 25 mins. I also roasted a mixture of cubed butternut squash and white potatoes that I sprayed with olive oil and seasoned with salt and pepper. I figured that 3 oz of the chicken would be around 4 points and a cup of the veggies 2 points. When I spray oil I now use a Misto, (available at
Bed Bath and Beyond), you fill it with whatever oil you want pump it up and off you spray!! It's all natural and no silicone or other unhealthy chemicals. I have 2 of them, one for olive oil and one for canola, I use them because the other type of spray oils have additives that I am allergic to.

Reminiscing

Have been thinking back today.
My Weight Watchers journey started in January 2005. I had my 'ducks all in a row' and did really well for a year and a half, lost a total of 87 pounds.
Then I kind of lost my will power and started to gain then lose on a regular basis, just recently I've gained more than I have lost and now my total weight loss is 63 pounds, but I am pretty sure that if I had stopped going to my meetings I would probably have gained a lot more in fact I would probably be back over 300 pounds. So guys they are right when they say that meetings are very important.

I'm 'back in the saddle' with exercise too. Have been unable to exercise for quite a while with my shoulder, but now it's almost good as new. I've been working out with my Wii. Got the new Wii Active and Wii Fit Update, best things ever. I am thoroughly enjoying working out everyday, never thought I would hear myself saying that!

I feel like I'm back, hooray. I think that I am definitely in the right frame of mind and writing things down in my blog and knowing that maybe I can inspire someone else to 'get back in the saddle' and get their 'ducks all in a row, is a big motivator.

Found some more goodies that I have been using.
Two different sources have said this past week that putting lemon into your green tea increases its health benefits substantially.
I have discovered an alternative to mayo that is extremely versatile..... Tzatziki! What is it I hear you say, well basically it's greek dip. Made from greek yogurt, flavored with garlic, cucumber and dill, delicious. I use it in place of mayo in sandwiches, I've made salad dressing by adding oil and a touch of vinegar, it would be great on a baked potato too. I got some from Sams, it's 1 point for 2 tablespoons or 0 points for 1 table spoon. But I am going to make my own using fat free greek yogurt, which will make it even lower in points and it's good for you! When I find a recipe I like I'll let you know.

Thought You Might Like To Know....

Found some great recipes this week.
I made Carrot Bread, wonderful. It's not made the conventional way, takes about a day and a half to make. Next time I make it I might try using apple cider for the liquid and adding some cinnamon. For the recipe go to marthastewart.com and search carrot bread. Also from Martha, Chicken and Ricotta Meatballs in Broth from the September issue of Everyday Food (everydayfoodmag.com). I changed the recipe a little and added 2 tblspns of freshly chopped rosemary and cooked them in pasta sauce instead of broth. This past Friday I also made the recipe into turkey burgers instead of meatballs....yummy!
Not to leave my other favorite girl out... Rachael Ray of course! Made a fabulous dish of hers Tastes-Like-Spaghetti Mini Meatball Risotto (rachaelrayshow.com). Now don't shy away from risotto, it may look complicated but it really is super easy, and you really should try this you will not believe the flavor. I make risotto in one form or another all the time.
Now to some of my own creations. My new fave thing is dulce de leche, I've been thinning out a tablespoon of it with a little milk and putting it on top of vanilla ice cream and I also put it on top of angel food cake, tastes very decadent but is only 1 point. I'm thinking I could use it to make a 'caramel' latte`, or smoothie.
Had some left over pumpkin so I made some pudding:
2 cups fat free milk
1 packet unflavored gelatin
1 cup of pumpkin
sweetener to taste
1/2 teaspn pumpkin pie spice
Add gelatin to 1 cup cold milk, let sit for 5 mins. Heat other cup of milk till just simmering, add to gelatin mix stir for 5 mins to fully dissolve gelatin, add sweetener and spice, add pumpkin, (if using fresh pumpkin puree in food processor before adding to mix), mix well and pour into individual bowls put in refrigerator at least 2 hours or until set.

An introduction

New to this blogging thing! So here goes. Perhaps a little about me is in order.
In my 20's
Fun loving, hard working, traveling, average weight!
In my 30's
Still fun loving, married, first child, packed on the pounds-oh boy!!! second child, added some more pounds, busy stay at home mom, third child, added even more pounds, life not so fun loving, but trying to be.
In my 40's
Remain a stay at home mom, raising children, doing for everyone, I take a back seat! Some success with weight loss thanks to Weight Watchers, so busy taking care of everyone where did my life go? Time for me. Food allergies---bummer!

Time to take a stand, enjoy life, turn over a new leaf. Perhaps this blogging thing will help me get my thoughts in order. Oh to be fun loving and care free again. Get some meaning back in my life.
